There are more than 200 known diseases which can be transmitted through food. The causes of such illness include viruses, bacteria, parasites, toxins,metals and prions. Symptoms of foodborne illness range from mild gastroenteritis to life threatening neurological, hepatic and renal syndromes.
To put it in perspective it is estimated that foodborne illnesses cause anything from 6 million to 81 million illnesses and up to 9,000 deaths each year in the United States. Such figures are however influenced by ongoing changes in the food supply chain, coupled with identification of new foodborne diseases.
